Pinot Noir Précoce is an early-ripening variant of Pinot Noir, originally planted by Lisa's father for its earlier harvest. It ripens in about 85 days, offering reliability in unstable weather. In 2022, Lisa used it both for red wine and as base wine for her Crémant, where it has proven its value for years. Aromatically, it is spicier, peppery, and more powerful than classic Mosel Pinot yet remains elegant. The wine is fully aged in wood, partly in new 600-liter casks and partly in 225-liter barriques. A trip to eastern Germany inspired Lisa to use the variety in Crémant production. Today it represents early ripening, climate adaptability, and a modern aromatic profile.
