Jean Marc introduced a new two stage process for his alcohol free white wine that preserves aromas and structure better than traditional vacuum distillation. The wine is first filtered and divided into two fractions. Only the alcohol containing liquid is dealcoholized and then recombined with the aromatic fraction. This keeps the wine fruity, full, and balanced. It retains its original tension with clear acidity and dense texture. The white wine feels lively and elegant and pairs perfectly with fish or light meats. For Jean Marc it is not a substitute but proof that alcohol free wine can remain true wine. His method shows how precise technique and respect for the wine’s character create an authentic result.
